Artichoke with Orange Olive Oil
Ingredients
4 artichokes
1 onion
1 potato
1 carrot
2 handfuls of peas
1 clove of garlic
Juice of 1 orange
1-2 drops of lemon juice
1 sugar cube
olive oil
dill to garnish
Instructions
Olive oil is put in the pot, the onion is cut into cubes and sauteed. Diced carrots, potatoes and peas are added and roasted.
Garlic is crushed and added. A little bit of orange juice is added, a little salt is added, it is fried a little, the lid of the pot is closed and it is cooked on low heat until the side dishes are a little soft.
Then it is taken out of the pot, the artichokes are put on it, a little salt, sugar, lemon, orange juice and water not to exceed the artichokes are added, it is boiled over high heat until it boils, and then it is cooked over low heat until it softens for almost 50 minutes.
When the artichokes are soft, put the garnish in the pot and fry for 3 minutes where the artichokes are cooked.
Put the artichokes in the pot and sautéed vegetables on top, if the water is low, a little water is added so that it does not wrap to the bottom. It is cooked in this way for 10 minutes on low heat. Good luck to those who are already doing it.
