Soft Turkish Bagel (Açma Poğaça)

  • 2 egg whites

  • 1 cup of warm milk

  • 1 water glass measure of oil

  • 1 glass of warm water

  • 1 packet of instant yeast

  • 4 tablespoons of sugar

  • 5-6 cups of flour

  • 1 tablespoon of salt

  • Egg yolk

  • Black cumin

  • Sesame



First of all, to prepare our dough, let's take the egg whites, which we separated the yolks for, into the kneading bowl.


Let's take milk, oil, warm water, yeast and sugar on it and mix it. Let's add our flour to our mixing bowl in a controlled way, add salt on it, and then mix it with the help of a spatula.


After the dough has solidified, let's take it to the counter and start kneading with our hands. After kneading, let it stretch and rest for at least 1 hour.


After kneading our fermented dough 1-2 more times, let's break off 2 pieces from the dough, put them on top of each other, turn them into a round shape and combine them. Let's continue the same process until the dough is finished.


Let's spread the egg yolk we separated on the pastries on the tray and sprinkle with black cumin and sesame seeds. Let's cook in a controlled way in the oven at 180 degrees.
