Wheat Salad with Orange
1 cup boiled wheat
greens (parsley, dill, scallions, mint), dried apricots and cranberries (raisins, dried cherries can also be used)
For the sauce: Juice and zest of 1 orange, olive oil, salt
Finely chop the greens and dried fruits and add them to the cold wheat.
Mix the ingredients for the sauce and pour it over the salad.
Recipe Tip and Cooking Suggestion:
If the wheat is slightly palatable, it will be much more delicious. I recommend not adding too much salt so as not to overpower the sweetness of the sauce and the orange. If there is no orange, it is also delicious with lemon.
